OCR: Liquid Malt Extracts are beer wort (unfermented beer) with most of the water removed. This concentrates the natural malt sugars to about 80%, creating a syrup much like honey, but with a lower pH. Hot packed in cans, or dried, no preservatives are necessary. You just add water to turn the extract back into wort, and yeast to ferment it into beer. Most British kits have instructions calling for lots of sugar. This is just cheap beer for the British market. You'll get much better beer if you make all-malt beer, using two cans, and add sugar just for priming.
